Mint pea pesto!

You know those little magazines that are free from your supermarket? I always pick them up and I can say with all honesty I find at least one great recipe idea in every issue. Mint pea pesto is the stand out item from Woolworths Fresh Easter edition. I copied the recipe yesterday and not surprisingly it’s so tasty, I used mint from my garden but the produce department of any supermarket has loads of fresh good quality herbs, just follow this simple recipe!

1 cup frozen peas

125g pine nuts, toasted

2 garlic cloves

1 cup mint leaves

1/3 cup olive oil

Place peas in a bowl and cover with boiling water, set aside for five minutes. Drain and transfer to a food processor, add pine nuts, garlic and mint and process until finely chopped. Scrape down sides of processor and with motor running, slowly add the oil. Process until well combined, season with salt and pepper. Serve with baked lamb or lamb riblets like I did. Also you could just serve as a lovely chunky dip….enjoy!
