One of my favorite dishes is prawns, avocado and salsa, essentially a prawn cocktail. I know it’s old school but prawns and avocado go together like peas and corn, I like to pile it all together in a glass finished with a piece of lemon and a little alfalfa for color but of course it’s your choice.
20 tiger prawns cooked shelled and “poo shoot” removed
1 ripe avocado sliced
1 punnet cherry tomatoes or a bowl if they are from your garden, quartered
½ red onion chopped
¼ cup fresh coriander chopped roughly
2 tablespoons lemon or lime juice
salt & pepper
In a bowl combine tomatoes, red onion, coriander and lemon juice, salt & pepper to taste. Spoon salsa into the bottom of a glass or bowl, layer prawns and then top with avocado. I would either place a slice or wedge of lemon or lime on the edge of the glass or bowl. Finish the simple fresh dish with a garnish of coriander, parsley or alfalfa, whatever you have to hand. Another option is using the avocado as a bowl, simply cut in half and remove the seed and probably some of the flesh, place salsa and prawns in the cavity and drizzle with lemon…….enjoy!
