Beef & Reef!

Beef and reef, surf and turf, steak and prawn! No matter the reference it’s enticing and these two amazing proteins have been paired for centuries…I think? I use them both regularly but not always together. I had two lovely scotch fillets and decided to cook them and serve with some vegetables. A home grown zucchini and some lovely little button mushrooms I bought today but something was missing….prawns! I tossed some prawns into it and used this yummy veggie and prawn mix as a bed for my perfectly cooked steaks! I then topped with some butter, garlic & home grown parsley, it was a delicious and no real fat except that little bit of naughty butter!

2 scotch fillet steaks

1 tablespoon of butter

2 garlic cloves, crushed

1 zucchini, sliced

1 punnet button mushrooms, sliced

500 g ready to eat prawns

4 spring onions chopped

salt & pepper

In a large saucepan or wok melt some butter over a medium heat and add garlic and mushrooms and cook until soft, add zucchini and toss for a few minutes, turn down to low and heat a fry pan or griddle for a few minutes, drizzle oil over the steaks along with salt and pepper. Place the steaks into the hot fry pan and cook for about 3 minutes each side depending on how you like your steaks cooked, remove and rest in some loosely wrapped foil for a few minutes. While steaks are cooking add prawns to the mushroom mix and stir fry for one minute, dish out onto a plate or large bowl. Slice steak and place on top, also at this stage you could add a dressing, sauce or simply some garlic & herb butter like I did….enjoy!
