Prawn & Pea Pasta!

photo (8)I love pasta for lunch, I love it anytime but a delicious fresh pasta dish for lunch is perfect. Usually this is created with whatever is in the fridge, I found some peas and prawns in the freezer so that was that!

What you will need………

250 g Rollini or similar

knob of butter

2 garlic cloves, crushed

300 g prawns, peeled

½ cup of frozen peas, thawed

6 spring onions, chopped

¼ flat leaf parsley, chopped

1 tbsp lemon juice

How to do it…………

Cook pasta according to packet directions. Meanwhile using a large fry pan or wok, toss in the butter and garlic and stir fry for one minute. Add the peas and prawns to the pan or wok and stir fry for 2 minutes, add the spring onion and the parsley, followed by the lemon juice. Drain the pasta well then add to the wok, stir until well combined and spoon into large bowls, 2 or 4 depending on how hungry you are. Top with a generous amount of Parmesan cheese. I would suggest a Pinot Grigio, just a glass to help wash it all down. Liz Richardson has a great one or try Yalumba Y Series, crisp and delicious…..enjoy!
