Another great idea for a side dish or entree, is taking those flavors that go together so well and creating something a little different. I saw this as a post on Facebook and just had to steal the idea, I wish I could give the creator the credit but I don’t know who you are? Mozzarella, tomatoes, asparagus and basil, yum! I chose to serve this with beef again but steak if cooked properly is so divine and mouth watering! This is a simple yet delicious side which is so easy to make and looks amazing on the plate!
What you will need…….
1 bunch fresh asparagus, halved length ways and cut to 5 cm lengths ( mine are not home grown, not from lack of trying, ready in about 4 years at this rate)
1 large ball of mozzarella cheese, sliced
2 large tomatoes, sliced
bunch of fresh basil leaves ( mine are home grown but supermarket fresh are fine)
How to do it…………
Using either a steamer or a small saucepan, steam or boil asparagus until just tender, drain and set aside. Cook your steaks to your liking and set aside wrapped loosely n foil to rest. On your plates create the stack with mozzarella first then asparagus ( placing the warm asparagus next to the cheese melts it a little and helps hold the stack together) then tomato and a layer of basil leave, repeat once more, use a skewer if necessary to hold your stack in shape. Any asparagus left oevr can be served on the side too. Drizzle with balsamic glaze and if you are feeling a little naughty top the steak with a blend of butter, garlic and any left over basil leaves………enjoy!
