I can’t get enough risoni! Once more I find myself reaching for it in the pantry to use as a side dish. I had some beautiful plump lamb rump, some fresh mint and freshly shelled peas so I thought introducing some risoni would be perfect and I was right….here is a recipe that is just bloomin’ lovely!
What you will need………..
1 cup risoni
1 cup fresh shelled peas or frozen if that’s all you have
2 garlic cloves, crushed
½ red onion, chopped
½ cup cherry tomatoes, quartered
1 tbsp freshly chopped mint leaves
1 cup Greek style yoghurt
2 tbsp mint sauce
How to do it……….
Cook risoni to packet instructions, while this is cooking heat some olive oil and a knob of butter in a wok or large fry pan. Add the garlic and onion and cook until soft, then add the peas and toss around for a minute or so. Add the tomatoes and mint leaves and cook for another minute. Now add the cooked risoni, salt & pepper and stir through. Combine yogurt and mint sauce in a bowl and dollop over lamb rump, fillet or chops, it’s that simple and delicious!
