Thai flavors, I just can’t get enough, I love to cook with chicken and just add some chili and kaffir lime leaves and we can’t forget horrible stinky fish sauce and you get a true Thai flavor. This is a simple but delicious recipe by the amazing Donna Hay, very easy to make but the flavor is so good your dinner guests will be very impressed!
What you will need…….
3/4 cup chicken stock
2 tablespoons fish sauce
1/3 cup lime juice
1 long red chilli, seeds removed and finely sliced
6 kaffir lime leaves, shredded
1/4 cup brown sugar or grated palm sugar
4 x 200g chicken breast fillets, trimmed (I used 8 thigh fillets but that’s up to you)
steamed jasmine rice and coriander leaves, to serve
How to do it……..
Place the stock, fish sauce, lime juice, chilli, lime leaf and sugar in a non-stick frying pan over medium-high heat and bring to the boil. Reduce heat and simmer for 3 minutes. Add the chicken and cook for 7-9 minutes each side or until cooked through. Divide between plates, top with poaching liquid and serve with steamed jasmine rice and coriander or as I have done, you can serve with steamed greens such as asparagus, broccolini and baby buk choy……….enjoy! Serves 4.
