My local fruit & veg had a trolley full of medium sized red capsicums all bagged up ready to go for $3 bucks, obviously they were selling so cheap as they were getting close to being too ripe. After a quick online search I found a very easy recipe at http://www.taste.com.au so I cooked it!

What you need……..

6 medium sized capsicums (peppers) quartered, seeds removed

½ cup kalamata olives, pitted, halved

1 tbsp capers, drained

1 tbsp fresh thyme leaves

1 tbsp olive oil

2 tsp red wine vinegar

How to do it…………

Preheat grill on highest setting, place capsicum in a single layer , skin side up on the grill tray, grill until skin is black and blistered. Transfer hot capsicums to a plastic bag, seal and leave for 10 minutes. Peel off blackened skin, cut flesh into long wide strips, Combine in a bowl with olives, capers, thyme, olive oil and vinegar, salt and pepper to taste. Stand for about an hour for full flavor to develop….that’s pretty much it! I included a couple more simple salads with some lemon & cracked pepper chicken drumsticks………enjoy!
