French Onion Soup!

Here’s my “soup of the week” and it just happens to be one of my favorites, Donna Hay’s recipe that I have reproduced many, many times from her Modern Classics cook book. A rustic soup that is very easy to make and taste’s delicious! The Dijon mustard and the brandy are divine with the sweet onion flavor, excuse me while I wipe away the drool, team it with some crusty bread or a cheesy toast makes for the perfect lunch. I have used my home grown thyme but supermarket fresh works just as well. If you follow this simple recipe I promise you will love this soup and look like a professional chef when serving up for friends and family, they will be suitably impressed!

What you’ll need……….

  • 8 brown onions, sliced
  • 30 g butter
  • 1 tablespoon olive oil
  • 1 tablespoon thyme leaves
  • 2 tablespoons plain (all-purpose) flour
  • 2 tablespoons brandy
  • 2 tablespoons Dijon mustard
  • 2 litres beef stock
  • 2 cups (500 ml) water
